Halfway between fudge bites and brownies, we're using honey, almond flour, coconut oil and nut butter to create these homemade, delicious chocolatey treats. These no bake triple chocolate brownie bars are your new obsession! Easy to make, with simple ingredients, they're layered, chocolatey, and completely plant-based, paleo-friendly, gluten-free, and refined sugar free. And no ovens involved.

INGREDIENTS

Cookie Dough Layer

  • 1½ (150g) cup almond flour
  • ¼ cup (34g) unsweetened cocoa powder
  • 1⁄8 teaspoon salt
  • ½ cup (95g) almond butter
  • ¼ cup (95 ml) honey
  • ½ teaspoon vanilla extract
  • 5 teaspoon (25 ml) almond milk

Chocolate Layer

  • 100g Wild West Dark Horse 70% Dark Chocolate bar
  • 1 Tbsp (15 ml) coconut oil

Chocolate Frosting

  • 1 cup (170g) chopped chocolate Wild West Dark Horse 70% Dark Chocolate
  • ¼ cup (60 ml) almond milk

    ¼ cup (56g) refined coconut oil
  • 1 teaspoon vanilla extract

HOW TO MAKE

  1. Line a 9- by 5-inch loaf pan with parchment paper or wax paper.

  2. In a bowl combine almond flour, cocoa powder salt, almond butter, honey, vanilla extract and almond milk.

  3. Transfer and spread the dough out to paper-lined sheet. Press down into the loaf pan using your hands until evenly packed and distributed making sure to get it all the way into the corners of the pan.

  4. Melt the chocolate chips and coconut oil together in the microwave in 30-second increments, stirring between intervals until completely glossy and smooth. Pour melted chocolate on top of the dough and smooth until even.

  5. Refrigerate for 4 hours or overnight until solid.

  6. Prepare Frosting: In a small saucepan over medium-low heat, mix together the chopped chocolate, almond milk, coconut oil and vanilla extract. Stir until melted and completely smooth.

  7. Let the pan cool for about 15 minutes (or until cool enough to place in the refrigerator) and then place in the refrigerator for about 10-20 minutes, stirring after every 5 minutes, or until firm enough to spread on the brownies. If you forget about it and leave it in the refrigerator too long, it'll be too firm to spread, so be sure to keep checking on it. Very lightly reheat it on low heat, stirring constantly, until it's soft enough.

  8. Frost and slice into 2-inch squares and serve immediately.
