These Almond Joyful Bars are a coconut lovers dream come true! Rich gooey coconut filling topped with a decadent ganache. Perfection! Not only are these bars absolutely decadent, they're healthier than their candy bar counterpart! Made with coconut oil, coconut flakes, and our Snowcapped Chocolate bars, these bars are packed with creamy coconut flavor, crunchy almonds and healthy fats. It's a dessert that warrants going in for seconds (or thirds.)
Ingredients:
- 2 cups unsweetened shredded coconut flakes
- ½ cup coconut oil, melted
- ¼ cup maple syrup
- 1 tsp vanilla extract
- 1 pinch sea salt
- 1 cup almonds
- 2 Wild West Snowcapped chocolate bars
- 1 tbsp coconut oil
Instructions:
- Line an 8x8" square pan with parchment paper and set aside.
- In a medium sized mixing bowl, combine shredded coconut, melted coconut oil, maple syrup, vanilla, and salt. Stir until combined.
- Spread half of this mixture into the bottom of the pan and press down firmly to compact the mixture into a base. Place your almonds evenly throughout this whole layer (the goal is to have at least one in each bar.)
- Using the second half of the coconut mixture, spread over top of the almonds and press firmly to create a top layer.
- Place this mixture into the fridge for 1 – 2 hours until firm.
- Remove the coconut bars from the fridge, and from their pan. Cut and shape into log-shaped bars. Set aside.
- In a separate, microwave safe bowl, melt your Wild West Snowcapped Chocolate Bars with 1 tbsp of coconut oil. Melt for 20 seconds at a time until fully melted, stirring between each interval.
- Once the chocolate is fully melted, dip each coconut bar into the mixture, coating evenly on all sides. Set back onto the parchment paper and place back in the fridge.
- When the chocolate is set (approx. 2 hours), your bars are ready to serve. Enjoy!
